Floral Elegance from the Highlands of Yirgacheffe

High in the mountains around Worka, Yirgacheffe, coffee is part of everyday life. Hundreds of local families grow coffee on small plots of land, often less than one hectare in size. Cherries harvested by around 1,500 smallholder farmers are delivered to the Shale washing station, where they come together to create the coffee we’ve chosen as our November Coffee of the Month. Ethiopia Shale has everything we love about coffees from Yirgacheffe – it’s light, clean, floral and beautifully aromatic. In the cup, expect the delicate character of white tea and jasmine, a fresh citrus note of bergamot and the gentle sweetness of raisins.

JAVA Coffee Roasters Ethiopia Shale specialty coffee in an autumn setting with colourful leaves

This is a coffee for those who enjoy subtlety and layers of flavour rather than a heavy, intense cup. And behind its delicate profile lies a much bigger story – high-altitude coffee farms, hundreds of smallholder producers and one washing station where their harvests come together to create a single lot.

In Yirgacheffe, coffee is a community-wide endeavor.

Shale comes from the Worka area of Yirgacheffe, where coffee is grown on small family farms, often alongside other crops and beneath trees that provide natural shade. The farms sit at an impressive 2,300–2,350 metres above sea level, where cooler temperatures slow down cherry ripening and give the coffee more time to develop its distinctive character.

Most farms are smaller than one hectare, so this is not the story of a single producer. Instead, Shale brings together the harvests of around 1,500 local smallholder farmers, who cultivate traditional Ethiopian coffee varieties commonly referred to as Heirloom.

Every harvest passes through the hands of local producers

After being hand-picked at peak ripeness, the coffee cherries are delivered to the Shale washing station, where harvests from surrounding smallholder farms are brought together into larger lots. Here, the coffee undergoes a washed process: the cherries are depulped, the beans are fermented and thoroughly washed, then spread out on raised drying beds to dry slowly and evenly.

Each stage is carefully managed to preserve the coffee’s clarity and natural character. Shale is therefore the result of many small harvests coming together in one place – and of the work of an entire coffee-growing community in this part of Yirgacheffe.

Ethiopia Shale has a light, floral and tea-like character, with plenty of aroma and a pleasant natural sweetness. The first notes to emerge are white tea and jasmine – delicate, clean and fresh. These are followed by bergamot, bringing the citrusy, floral aroma you might recognise from Earl Grey tea. A gentle raisin sweetness rounds everything out and gives the cup a smooth, balanced finish.

As a Filter, Shale shows its lightest and most delicate side, with floral notes and tea-like freshness taking the lead. As an Espresso, it becomes more concentrated and noticeably sweeter – raisin comes further forward, while jasmine and bergamot keep the cup aromatic and fresh.

This is a coffee for those who enjoy clean, aromatic and distinctive flavours. Whether brewed as espresso or filter, Shale showcases the more delicate and elegant side of Ethiopian coffee.
